LAS VEGAS – A taste of Michigan is coming to Sin City.
Downtown Las Vegas-based mogul and native of Detroit, Derek Stevens has posted a list of food and beverage outlets opening in and around his upcoming 777-room Circa Resort and Casino.
Some of the restaurants share a thread that leads to the same place – its home state.
“In addition to amazing food, they will all instill the spirit of fun and community that is essential to the Circa experience,” said Stevens.
It is scheduled to open around the end of 2020 and is the first new resort project in the city center in decades. The concept aims to add a slice of modern flair to a downtown gaming corridor known for the cheap and simple old Vegas vibe that sets it apart from the Strip’s larger than life draw.
Here’s a look at the mix of food and drink set to open with Circa:
Victory Burger and Wings
The win will be the culinary anchor in view of Circa’s sports betting. This restaurant is owned by Chris Sotiropoulos and Grace Keros – third generation owners of 102 year old American Coney Island in Detroit. The menu features wings, starters, and five burger specialties, including the Victory Burger – half a pound of Angus beef, short ribs, and brisket patties with a secret sauce. Then there’s the Olive Burger, a Michigan culinary staple: a unique iteration of the hamburger made from a beef patty topped with a mixture of mayonnaise, chopped olives, and often olive brine.

Saginaw’s delicacies are from Paul Saginaw, a legend from Detroit. This is the restaurateur’s first new restaurant outside Michigan behind Zingerman’s Deli – an Ann Arbor institution that Saginaw opened with partner Ari Weinzweig in 1982. Zingerman’s sandwiches have been touted by some of the best in the country. Saginaw’s menu in downtown Las Vegas features its famous Reuben, breakfast specials, and delicatessen classics: matzo ball soup, onion rings, salads, latkes, and chopped liver.

This will be the Fremont Street Experience’s only permanent food truck. From the point of view of Chef Rex Bernales and partners Rob Baker, Mo Pierce and Steve Hamlin, Project BBQ will offer pulled brisket, pork, chicken and the signature “garbage bowl”. The bowl looks like this: handmade potato chips coated with meat, a trio from South Carolina BBQ, beer and cheese sauces – and then with bacon and coleslaw made from apple wood.

Barry’s Downtown Prime
Barry’s Downtown Prime is a new steakhouse concept from head chef Barry Dakae and Make it Happen Hospitality. This restaurant offers customers an atmosphere reminiscent of Las Vegas of the 50s and 60s. In addition to the red meat on the menu, there is seafood that is freshly prepared at the table.

8 East has a Pan-Asian menu with Chinese, Japanese, Vietnamese, Korean and Thai cuisine. Thai chef Dan Coughlin will introduce new fusion dishes that have only been tried with friends and family. The menu includes dishes such as GaPow basil chicken stickers, dumplings, wontons, skewers and steaks.
