Pals with benefits: Greisy Pacton in Paris Las Vegas

Greisy Pacton is a Las Vegas food and beverage executive – and she has the résumé to back it up. She has helped open and run restaurants for chefs and restaurateurs such as Kerry Simon, Elizabeth Blau and Giada De Laurentiis. Now she is the manager of the Paris restaurant Gordon Ramsay Steak by celebrity chef Gordon Ramsay.

Pacton was born in Puerto Rico and raised in Queens, New York City. In 2001 she moved to Las Vegas. For the first seven years she helped set up and run Simon Kitchen & Bar in the Hard Rock Hotel, Cathouse in Luxor and Simon Restaurant in Palms Ort. Homesick for New York, she retired for a few years to open and manage the famous Barclays Center. “I missed Vegas in 2014, it was home and we wanted to go home,” she says.

Shortly after her return, she joined Giada at The Cromwell as a restaurant manager and was eventually promoted to general manager. In 2019 she applied and was appointed General Manager of Gordon Ramsay Steak in September.

“In my opinion, this restaurant set the tone for what a celebrity restaurant should be,” says Pacton. Running a restaurant with the name of such a famous chef “feels good,” she says. “You feel special. The guests are die-hard fans of Ramsay and their excitement is contagious. We don’t save lives, but we create memories and it feels good. “

After two decades in the industry, you can still see the twinkle in her eyes and hear the real passion in her voice when she talks about her success. “You have to believe in what you do to be there for so long,” says Pacton. “I love it. I don’t think I want to do anything else. I never thought I’d manage multimillion-dollar operations – it just feels amazing to say that.”

It is mixed with VeeV Acai Liqueur and fresh lemon and blueberries.
